Cryomaceration, soft pressing, low temperature fermentation

Maturation in steel vats for 3 months with noble lees fermentation and refermentation in bottle

Montelparo, via Celestiale, height 300/380 m, South-East exposure, mixed loose earth with presence of limestone

Growing:   3000 vine stakes per hectare trained with the double Guyot system
Yeld:   6000 kilos per hectare

Color:   Straw yellow with hints of green
Aroma:  

Floral with delicate aromas reminiscent of the yellow blossom of the mimosa and the broom, fruity with yellow fruits like peach and exotic fruits like pineapple and fragrant with bread crust overtones

Palate:   Fresh, balanced, intense
Alcohol content:   12,50%
Serving temperature:   6-8 degrees
Wine and food pairing:  

Fried fish, seasoned cheeses.
Fossa cheese DOP, Ascoli olive and cremini.
Ciauscolo IGP, a soft spreadable salami
