Percentage:   90% Sangiovese 10%Sangiovese
Wine making:  

Cryomaceration, soft pressing, low temperature fermentation

Fining:  

Maturation in steel vats for 3 months with noble lees fermentation and refermentation in bottle

Production area:  

Montelparo, via Celestiale, height 300/380 m, South-East exposure, mixed loose earth with presence of limestone

Growing:   3000 vine stakes per hectare trained with the double Guyot system
Yeld:   6000 kilos per hectare
Organoleptict characteriscs
Color:   Soft rosè with cherry hints
Aroma:   Floral with delicate aromas reminiscent of the red blossom of the rose, fruity with red fruits like black-cherries and fragrant with bread crust overtones
Palate:   Fresh, balanced, intense
Alcohol content:   12%
Serving temperature:   6-8 degrees
Wine and food pairing:  

Fried fish, seasoned cheeses.
Fossa cheese DOP, Ascoli olive and cremini.
Ciauscolo IGP, a soft spreadable salami
