Cryomaceration, soft pressing , low temperature fermentation, 5% fermented in barrique

Fining:  

Maturation in steel vats for 8 months with noble lees fermentation then six months in barrique and bottled

Montelparo, via Celestiale, height 300/380 m, South-East exposure, mixed loose earth with presence of limestone

Growing:   3000 vine stakes per hectare trained with the double Guyot system
Yeld:   7000 kilos per hectare

Color:   Straw yellow with hints of gold
Aroma:   Floral with  aromas of wildflowers, fruity reminiscent of  yellow ripe fruit, bananas, mineral, spicy with hazelnut, cinnamon, honey
Palate:   Fresh, balanced, intense
Alcohol content:   14,50%
Serving temperature:   12-14 degrees
Wine and food pairing:  

Fish dishes , white meat, seasoned cheeses. Pappardelle with wildboar.
