Grapes

 

This is the most important sector of Casale Vitali’s farm, born of Gabriele’s passion for the wine and for all its process: from the cultivation of typical and indigenous vines (Sangiovese and Montepulciano for the red wine, Pecorino, Passerina and Trebbiano for the white wines) to the grape’s processing.

 

Quality is the rule number one: after a careful selection of grape variety to produce a low yield per hectare, we pay special attention to tending the vines to produce the best grapes. Immediately following the harvest they are crushed using a soft pressing technique and low temperature fermentation in order to enhance to the fullest extent the aromatic flavours of the grape to give life to a quality wine which reflects its “terra” (terroir).
